I didn’t grow up eating pepper steak, but the first time I tried it, I immediately understood the hype. It was glossy, savory, a little sweet, loaded with juicy strips of beef and colorful peppers and it tasted like magic.

It’s now one of my go to dishes I make whenever I’m craving takeout but from home. It comes together fast (seriously, you’ll spend more time deciding what show to watch while you eat) and hits all the notes. It’s salty, sweet, peppery, and just the right amount of saucy. It’s the kind of meal that makes you say, “Wait… I made this?”

And yes. Yes, you did.

What is pepper steak ?

Pepper steak is a classic Chinese-American dish, and just like the name suggests, it’s all about steak and peppers. Thinly sliced beef is stir-fried with colorful bell peppers and onions, then tossed in a rich, savory soy-based sauce that’s glossy, garlicky, and full of flavor. You can spoon it over rice or noodles anything to soak up every last drop of that irresistible sauce.

The Secret Sauce

This sauce is the perfect balance of salty, sweet, tangy, and savory with just enough depth to make it feel like something from your favorite takeout spot. Here’s what goes into it:

Soy Sauce: I like to use a mix of regular soy sauce and dark soy sauce. The dark soy adds a deeper color and a richer, slightly caramel-like flavor. If you only have regular or all purpose soy sauce, that’s totally fine your sauce will still taste great, just a bit lighter in color.

Oyster Sauce: This adds depth and umami that makes the sauce taste full and complex. It’s that “restaurant flavor” that’s hard to put your finger on but always crave-worthy.

Brown Sugar or Honey: Don’t worry, this won’t make your sauce taste too sweet. It just balances out the dish and gives the sauce a smooth, rounded finish. Truth is, most Asian-style takeout sauces include sugar. This one just does it better.

Rice Cooking Wine: You can use Chinese cooking wine, rice wine, or even dry sherry. It gives the sauce a little lift and makes it feel more complete. If you skip it, the dish will still work but this ingredient adds that “why is this so good?” factor.

Cornstarch: No need to make a separate slurry! Just mix the cornstarch straight into the sauce so it thickens up beautifully once it hits the hot pan.

Water: To loosen everything up. I usually use ½ cup of water if I want the sauce on the thicker side, or ¾ cup if I’m feeling extra saucy.

Where’s the Beef?

Right here and it’s doing the most. The best cuts for pepper steak are the ones that cook fast and stay tender. Flank steak and top sirloin are my go-to choices. If you’re feeling fancy ribeye is excellent as it’s soft and perfect for stir-fries, but it can be on the pricier side. Now for slicing, this is your chance to channel your inner chef so you want to slice that beef thin. Like, paper-thin if you can manage it. Grab your sharpest knife, and if slicing raw meat ever frustrates you, here’s a tip: put the beef in the freezer for about an hour. It firms up just enough to make thin slicing way easier.

Seasoning

You don’t need to overload the beef with seasoning because the sauce (which we already covered) is packed with layers of flavor so for seasoning, we are keeping it simple. I season the beef with liquid Maggi and black pepper that’s it. Also, don’t skip the garlic and ginger. They’re non-negotiable. You can mince them fresh or use paste, but they absolutely need to be in there for that rich, restaurant-style aroma and flavor.

The Veggies(and heat)

Bell peppers and onions are the classic duo in pepper steak. I like to use a mix of green and red bell peppers for that bright pop of color and a little sweetness. Feel free to use whatever you’ve got. Yellow, orange, all red, all green, it all works. Now, for spice. I like my food with a little fire, so I throw in a generous amount of sliced bird’s eye chili. It is called pepper steak, after all. If you can’t find bird’s eye, feel free to use scotch bonnet or habanero. You can adjust the heat to your taste, of course. Add a little or a lot if you want that kick. Either way, the spice makes the whole dish come alive.

How to make it

First things first, prep everything ahead of time. This recipe moves fast once the heat is on, so having all your ingredients ready will save you from a mid-stir-fry panic.

Start by slicing the beef thin, like really thin. Then cut your bell peppers into any shape you like. I usually go for square-ish chunks; it looks good and cook evenly. Mince the garlic and ginger and set aside. Now, about the sauce. Mix all your sauce ingredients in a small bowl or jar, give it a good stir (or shake, if you’re using a jar), and set it aside.

Season your sliced beef with black pepper and liquid Maggi, then add a little cornstarch. The cornstarch helps lock in moisture and gives the beef that silky texture you get from great stir-fries. Let it marinate for about 10 minutes while you heat up your pan.

You’ll need a wok or a large heavy-bottomed pan. Get it nice and hot. Add a bit of oil, then sear the beef in batches. Also, don’t overcrowd the pan! If you dump it all in at once, it’ll steam instead of sear, and we want that lovely browning. Once the beef is browned, remove it from the pan and set it aside.

Add a little more oil if the pan is dry, then toss in your minced garlic and ginger. Let that sizzle for about a minute, just until fragrant. Then add the onions, chilis, and bell peppers. Stir-fry everything for a few minutes until the veggies start to soften but are still crisp and colorful.

Now return the beef to the pan, pour in your sauce, and stir until everything is beautifully coated and the sauce thickens into that perfect glossy finish.

And that’s it! Serve it hot over rice or noodles, and just watch how fast it disappears.

Serving Suggestions

  • Pile it over a bowl of fluffy jasmine or basmati rice.
  • Toss it with lo mein or stir-fried noodles.
  • Serve with steamed broccoli or snap peas on the side for bonus greens.
  • If you’re feeling fancy, top it with sesame seeds or sliced scallions for the restaurant look.

Ingredients

To Marinate the Beef

  • 500 g top sirloin steak thinly sliced (see Note 1 for best cuts and sllicing tips)
  • 1 tablespoon soy sauce 15g
  • 1 tablespoon oyster sauce 18g
  • 2 teaspoons cornstarch 6g
  • 1 teaspoon liquid Maggi seasoning 6g
  • 1 teaspoon black pepper (about 1g)

Veggies

  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • ½ white onion chopped
  • 5 bird’s eye chilies adjust to taste
  • 4 cloves garlic minced
  • Small piece of ginger minced

Stir Fry Sauce

  • 2 tablespoons oyster sauce 38g
  • 1 tablespoon dark soy sauce 15g
  • 1 tablespoon regular soy sauce 15g
  • 1 tablespoon rice cooking wine 15g
  • 1 teaspoon brown sugar or honey 4g
  • ½ cup water (120ml)
  • 2 teaspoons cornstarch 6g

Others

  • Oil for frying

Instructions

  • Quick tip: Prep everything ahead. This recipe cooks quickly.
  • Thinly slice the beef across the grain. See notes not top to cut thinly.
  • Marinate the beef with soy sauce, oyster sauce, cornstarch, liquid Maggi, and black pepper. Let it sit while you prepare the other ingredients.
  • Chop the bell peppers and onions. Mince the garlic, ginger, and slice the chilies.
  • In a small bowl or jar, mix all the stir-fry sauce ingredients.(Soy sauce, oyster sauce, Chinese cooking wine or cherry, cornstarch and water). Mix well and set aside.
  • Heat a wok or large pan until it’s very hot. Add a drizzle of oil and sear the beef in batches. Don’t overcrowd the pan so the beef doesn’t start to steam instead of fry.
  • Cook the beef until browned, then set aside.
  • Add a little more oil if needed, then lightly fry the minced garlic and ginger for about 1 minute.
  • Add the onions, chilies, and bell peppers. Stir-fry for a few minutes until slightly softened but still crisp.
  • Return the beef to the pan. Pour in the stir fry sauce and stir everything together until the sauce thickens and coats the beef and veggies.
  • Serve hot with rice or noodles. Enjoy!

Notes

  1. The best cuts for pepper steak are the ones that cook fast and stay tender. Flank steak and top sirloin are my go-to choices. If you’re feeling fancy ribeye is excellent as it’s soft and perfect for stir-fries, but it can be on the pricier side.
